This is my sister’s and my Easter presents for our families. It’s a very easy dove without long rising. We decided to flavor this dove with orange scent and chocolate drops!
Here’s the recipe:

Ingredients:

  • 150 gr flour
  • 150 gr potato flour
  • 200 gr butter
  • 150 gr sugar
  • 4 eggs
  • 1/2 lemon
  • 1 yeast
  • 1 vanilla
  • 1 orange scent
  • 100 gr chocolate drops
  • 70 gr sugar
  • 1 white egg
  • 100 gr granulated sugar
 

Working:

1. put in a bowl the flour, the sugar and the potato flour and mix them with a wooden spoon
2. add the warm butter in pieces and mix them with your hands
3.add the eggs ones a time and mix
4.add the yeast, the vanilla and the orange scent and mix
5.put half mixture in the mold
6. cover with chocolate drops
7. cover with the other part of mixture
8. make the icing whipping the one white egg with 70 gr of sugar
9. cover the dove with the icing and the granutated sugar
10. cook in the hoven at 180° for 40 minutes
 
I liked this easy dove but we had a little problem…all the chocolate drops sinked to make a only chocolate layer! I asked help…someone suggest to put the drops in the freezer or to flouring them…however next time I will not put all the drops together!!!
The dove smells a lot and it is soft and light!!!

This is a bicolor cake with a particoular and funny effect! I made it at work with my cooking group. It’s very easy but you need a bit time to create the zebra effect!
Here’s the recipe:

Ingredients:

  • 300 gr flour
  • 140 gr potato flour
  • 150 gr butter
  • 100/120 ml milk
  • 1 yeast
  • 6 eggs
  • 1 vanilla
  • 220 gr sugar
  • 30 gr cacao
 

working:

1. whip the butter with the sugar
2. add the eggs ones a time
3.when the mixture is soft add the flour, 100 gr of potato flour, yeast and vanilla
4. mix with a wooden spoon adding milk
5. divide the mixture in two bowls and add in ones the cacao and in the other ones 40 gr of potato flour
6. you need to obtain the same density so add 1/2 spoons of milk in the chocolate mixture
7.take the cake mold
8. put in the centre of the mold 2 spoons of white mixture and then put 2 spoons of chocolate mixture in the centre of the white ones
9. make the same with all the mixture being carefully not to move the mold, until you obtain many concentric circles
10.cook in the hoven at 180° for 50/60 minutes.
 
I think this is a cake that loves whipped cream or  tea because it’s little dry to eat with nothing else. Hope you like it!!!

On 24 March it was my sister’s birthday and I made a funny cake.
I used my last two cakes to obtain a third different ones.
Here’s the to do list…
 
 
1. make a nutella cake in a 17cm mold
2. make the sponge following this recipe without roll it
3. divide the nutella cake in two parts
4. cut the sponge in 4 long stripes
5. cover every stripe with chocolate cream, nutella, marmelade or whatever you want
6. put one part of nutella cake on your plate
7. cover the cake with a cream that you like (I used chocolate whipped cream)
8. roll a stripe of sponge and put it in the centre of the cake upside
9. roll the second stripe on the first and so with the other stripes…you should obtain a roll as great as the nutella cake
10. cover the top of the roll with the cream
11. put the other part of nutella cake on the cream
12. use your fantasy to decorate the cake ( I use the chocolate whipped cream and chocolate drops)

 

I know…it seems to be very difficult and complicated…but it’s more easy to do than to explain… When you cut a piece of cake you can see a very nice effect of perpendicular stripes of cake and cream!!!

I like rolled sponge so when I find this funny ones I decided to try it!!! It’s enough easy to obtain the giraffe effect. I follow my mummy’s recipe for the sponge…it’s longer than other recipes but I think it’s the best!!!

Here’s the recipe…

Ingredients:

  • 4 eggs
  • 100 gr sugar
  • 100 gr flour
  • 1 spoon cacao
  • something to put into the rolled sponge like chocolate, marmelade, cream,…
  • salt

Working:

  1. Beat one yolk with a spoon of sugar turning with the wooden spoon always the same side
  2. Add ones a time the other yolks with their sugar spoons (always the same side!!!)
  3. Add the last sugar spoon ( in 100 gr of sugar or flour you have 5 spoons) and mix until obtain a soft and white cream
  4. Add to the cream the flour spoons ones a time
  5. Whip the egg whites with a bit of salt and add them to the mixture carefully
  6. Cover the baking with hoven paper
  7. Butter the paper
  8. Take off a llittle part of mixture and add a spoon of cacao
  9. Put the chocolate sponge into a sac a poche and draw on the baking paper the giraffe pattern
  10. Spread really carefully the white mixture on the chocolate pattern
  11. Cook in the hoven at 200° for 10 minutes
  12. Take off the hoven and roll it
  13. Let it cool
  14. Unroll the sponge and cover with whatever you want
  15. Roll the sponge again
It’s a very scenographic cake…if you want you can use chocolate instead of cacao and with very little hole in you sac a poche you can draw a very particoular and artistic pattern on your baking paper…you need only a lot of time and patience!!! I wait you suggestions about pattern rolled sponge. Here you can find a nice idea!!!

This is the cake for my sister’s last birthday… The recipe is from Benedetta Parodi and when I made it I was very skeptical…the mixture was so liquid and with so little nutella… I put the mold in the hoven hoping to obtain a cake!!!
Well, the result was better than what I thought!!!! The cake is very soft and humid but it doesn’t grow up a lot.
Here’s the recipe…it’s very fast and easy!

Ingredients:

  • 160 gr flour
  • 150 gr sugar
  • 3 eggs
  • 200 ml milk
  • 3 spoons Nutella
  • 1 yeast

Working:

1. Beat the eggs with the sugar

2. Add the milk and the nutella

3. Add the flour and the yeast

4. Put the mixture in a mold

5. Cook in the hoven at 180° for 30 minutes

 
This cake was for a birthday so I coverd it with chocolate ganace ( I would like to use chocolate mousse but it becames a ganace…so!) and then I made a bow with the sugar paste! I hope you can like this cake too!!!

Looking among other blogs on wordpress I found a very nice recipe of an orange cream and I decided to taste it! For my birthday I made mini tarts filled with this cream and I found them really good! I prefer this recipe than mine because there is no butter and it better smells and tastes of orange! Unluckly my little sweets were so appreciated that nobody made a photo… So I had to make them again… Tomorrow I will go for lunch at granny’s home and I decided to bring something sweet… Since this orange cream needs 3 yolks I thought to make the White eggs cake and to filled it with orange cream and chocolate drops! I hope it could be a good marriage!!!

Ingredients:

  • 250 ml milk
  • 100 gr sugar
  • 3 yolks
  • 20 gr flour
  • 1 orange

Working:

1. put in a pot the milk with the grated orange peel and the orange juice
2. put the pot on the stove until the milk boil
3. while it warms up, whip in a bowl the sugar with the yolks until you have a white and soft cream
4. add the flour to the mixture of sugar and yolks
5. when the milk is hot, turn off the stove and put the pot on the table
6. add the mixture of yolks into the milk mixing them
7. put the pot on the stove again and mix it until it thickens (more or less 1o minutes)
8. put the cream in a bowl and cover it with a plastic film
9. let it cool

 

 

I made the cake and the cream, then I let them cool. I cut the cake into two parts and I covered ones with the orange cream and chocolate drops. At the end I close the cake with the other part! I’m keeping it in the fridge because I will eat it tomorrow but you can keep the cake out of fridge if you can eat it in short time (luckly you)!!!
I think that chocolate is a great combination with agrumance smells…Well, I think chocolate is a great combinance with everything…and also alone it’s a great idea!!!

In my last post I promised to give you an idea to use white eggs… Last Thursday at work we made a tart with mascarpone and chocolate chips  and three white eggs were left! We hadn’t got enough time to do meringues so we run at the pc and we searched “recipes with white eggs“…we found a lot of complicated or salad recipes until we saw this ones on http://www.gnamgnam.it/2013/05/29/torta-di-albumi-al-limone.htm ! It’s a very easy and quickly cake without yolk and butter!!! The original recipe needs lemon but we had only oranges…so!

Ingredients:

  • 150 gr sugar
  • 100 gr oil
  • 150 gr water
  • 200 gr flour
  • 1 yeast
  • 3 white eggs
  • 1 lemon

working:

1. mix in a bowl water, sugar and oil
2. add the flour, the yeast and the grated lemon peel (we used orange)
3. in another bowl whip the white eggs
4. add the whipped white eggs to the mixture in three times and mix it very carefully
5. put the mixture into a cake mold
6. cook in the hoven at 180° for 30 minutes
It’s a very light cake!!! I offered a piece of cake to a girl (I didn’t know that she doesn’t eat yolks and butter…I was lucky!!!!!) and she liked it very much!!! Let’s taste it and give me your advises…what do you do when some white eggs are left???

Tart with mascarpone and chocolate chips

I work in a centre for disable people. On Thursday mornings we use to cook and we obiouvsly cook sweets! Every month we choose a kind of sweet…February was the month of the tarts! The last tart was so delicious that I decided to write about it! Here’s the recipe…

Ingredients:

  • 400 gr pastry
  • 250 gr mascarpone
  • 250 gr ricotta
  • 200 gr sugar
  • 10 gr potato flour
  • 100 gr chocolate chips
  • 2 yolks
  • 1 vanilla
  • 1/2 teaspoon cinammon

Working:

1. make the pastry follow your favourite recipe
2. roll out the 3/4 of the dough (keep the other 1/4 for decoration)
3. put the dough into a tart mold
4. in a bowl put the ricotta, the yolks, the sugar, the cinammon , the vanilla and the potato flour and mix them with an elettric mixer
5. add the mascarpone and the chocolate chips and mix them with a wooden spoon
6. put the cream into the tart mold
7. decorate the tart with the 1/4 of dough as you prefer
8. cook in the hoven at 180° for 40/50 minutes

 

We used little tart molds so everyone could make her/his own tart… Even if it stayed into the hoven so long time the tart was very soft and creamy!!! Really delicious!
The only problem is that you don’t need the white eggs…but I have the solution…follow my next post to discover how to use white eggs in a very sweet way!
